Deconstructed Nicoise Salad

This salad is so satisfying! I could eat it everyday!

It’s quick and easy to throw together, whether you are making a few ahead for lunches for the week or you need a quick dinner idea.

Deconstructed Nicoise Salad


The ingredients for this salad are purposely vague, you can change the ratios to suit your tastes. I used:
2 handfuls of green beans
3 small baked potatoes (you can also use boiled)
1 small package of plum tomatoes, halved
2 hard boiled eggs, peeled and halved
1 can of tuna, drained (click here for a sustainability rating for Canadian canned tuna)
Balsamic vinaigrette dressing to taste (I like this recipe)


  1. Arrange ingredients beautifully on a plate.
  2. Add vinaigrette to taste.
  3. Enjoy!

NOTE: This is a perfect make-ahead lunch or meal-to-go. Just pack the dressing separately and add before eating!
